
Farm and provenance
The farm remains the foundation of honest cooking and products with a clear origin in the quieter season.
Our family has run the Praplan Farm for more than five generations. At 1,780 metres, it is our home and, in winter too, the source of much of what reaches the table at Baita Odles.
Winter in Val Gardena
When the mountain meadows lie beneath the snow, daily work in the stable comes to the fore. Quality hay from our own meadows feeds our 25 cattle through winter and follows the rhythm of nature.
Hens and fresh eggs in daily farm life
Our hens remain an important part of everyday farm life. We use their fresh eggs in the kitchen when they suit the season and our dishes.
Cows and calves
While the pastures rest, our animals spend winter at the farm. Calm surroundings, good feed and a daily routine that respects their needs remain a matter of course for us.
Pigs from our own farm
Our animals and short distances give all we prepare a clear origin. That connection shapes our speck, meat dishes and the food we serve.
Goats at the farm
Our goats are part of daily farm life, too. In winter they live sheltered at the farm and remain part of the work that connects our family with farming.
From the farm to the plate
For us, good flavour does not begin in the kitchen. It begins with the animals, the quality hay from our meadows and the daily work of our family.
